Raspberry oat bars

These raspberry oat bars are buttery, fruity, and delicious! Perfect for a large gathering and quick to throw together.

Ingredients. yields: 12 bars

  • 2 sticks + 1 1/2 T unsalted butter (melted)
  • 2 1/3 cup oats
  • 2 cups all purpose flour
  • 1 1/4 cup brown sugar
  • 1 1/8 teaspoon baking soda
  • 1 1/8 teaspoon salt
  • 1 1/2 teaspoon cinnamon
  • 1 1/2 cup raspberry jam
  1. Whisk together your flour, oats, sugar, baking soda, salt, and cinnamon.
  2. Pour your melted butter into your flour mixture and combine with your hands until there are no flour lumps.
  3. Spray your 1/2 baking sheet and line with parchment.
  4. press half of the crumb mixture into the pan very well.
  5. Spread all of your raspberry jam, but leave space at the edge of the pan so it doesn’t scorch.
  6. Sprinkle your remaining topping and gently press down.
  7. Bake at 330 for about 30 minutes, you’ll know it’s done when the jam is bubbling and the topping is golden! let cool completely and slice.

I baked my bars in a 1/4 baking sheet and I had some of my topping and jam bubble off, so I recommend using a 1/2 sheet or 9×9 baking pan.
