
These raspberry oat bars are buttery, fruity, and delicious! Perfect for a large gathering and quick to throw together.
Ingredients. yields: 12 bars
- 2 sticks + 1 1/2 T unsalted butter (melted)
- 2 1/3 cup oats
- 2 cups all purpose flour
- 1 1/4 cup brown sugar
- 1 1/8 teaspoon baking soda
- 1 1/8 teaspoon salt
- 1 1/2 teaspoon cinnamon
- 1 1/2 cup raspberry jam
- Whisk together your flour, oats, sugar, baking soda, salt, and cinnamon.
- Pour your melted butter into your flour mixture and combine with your hands until there are no flour lumps.
- Spray your 1/2 baking sheet and line with parchment.
- press half of the crumb mixture into the pan very well.
- Spread all of your raspberry jam, but leave space at the edge of the pan so it doesn’t scorch.
- Sprinkle your remaining topping and gently press down.
- Bake at 330 for about 30 minutes, you’ll know it’s done when the jam is bubbling and the topping is golden! let cool completely and slice.




I baked my bars in a 1/4 baking sheet and I had some of my topping and jam bubble off, so I recommend using a 1/2 sheet or 9×9 baking pan.
