Chicken veggie stir fry

Happy Monday! In honor of the new year and healthy eating, I wanted to share this delicious, filling meal! You can enjoy the stir fry as is, or customize it however you like. I enjoy it with a bowl of rice and soy sauce!

  • 20 brussel sprouts (chopped or shaved)
  • 2 cloves garlic (grated)
  • 1 small onion (diced)
  • ginger, grated to taste
  • 2 heads broccoli (chopped to bite sized pieces)
  • 2 carrots (shaved, grated, or diced)
  • 2 Tablespoons olive oil
  • 15 oz diced tomatoes (can use fresh)
  • 2 chicken breasts (cubed)
  • toasted sesame oil, to taste
  • cooked rice, optional
  • soy sauce, to taste

Begin by chopping your Brussel sprouts (if needed),onion, broccoli, and carrots to your desired size. add to a warm pan with some olive oil, season with salt, pepper, garlic powder, and any desired seasonings, cook this mixture until your vegetables are tender.

In another pan, cook your cubed chicken in some olive oil and season accordingly. Once your vegetables re tender and your chicken is cooked, add the cooked chicken to the vegetables and add your grated garlic, ginger, diced tomatoes, and toasted sesame oil. cook for about 5 minutes. Serve with rice and soy sauce if desired, enjoy!
