Brunswick stew

Hi friends! Here I am once again with a soup recipe…haha.

This stew recipe is courtesy of my best friend’s mom aka Mama Judy. If you’re looking for a quick yummy meal this is it!

  • 46 oz chicken broth
  • 28 oz tomato puree
  • 6 large potatoes (peeled and large diced)
  • 1 onion (diced)
  • 1 teaspoon sugar
  • 1/2 teaspoon pepper
  • 3 dried thyme leaves
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 10 oz frozen corn
  • 10 oz frozen Lima beans
  • 2-3 cooked chicken breast (or rotisserie!)
  • Hot sauce for serving !

In a large stock pot, cook onions for 3-4 minutes in olive oil, add chicken stock, tomato puree, potatoes, and onions. Bring to a boil and season.

Reduce to a simmer and cover for 30 minutes or until your potatoes are tender. Add corn and Lima beans, bring to a boil and cook for 5 minutes. Lastly, add your chopped cooked chicken and let it heat.
